Spring Pea and Feta Dip with Mint

This dip is is an homage to all things spring and fresh! Serve with warm pita, crudité, or potato chips.

Frozen peas are a star because they’re packed at the peak of ripeness and freezing them preserves their texture and sweetness. Also, the price is right! Peas continually ring in as one of the most nutritional bangs for your buck.

That being said, I love grabbing some fresh peas from the Farmers Market when spring is full swing. There’s something about shelling my own peas that I find extremely gratifying. I know, I’m a huge nerd and I embrace it!

You can use both fresh and frozen peas for this dip. That’s right, you can relish in this spring dip all year round!

I LOVE PEAS! I use frozen peas regularly year-round. I add them to soups, stews, curries, pastas, risottos, Pesto’s food; I could go on and on.

Equipment

  • 1 large pot
  • 1 large bowl
  • 1 strainer
  • 1 food processor

Ingredients
  

  • 2 cups shelled peas fresh or frozen
  • ¼ cup fresh mint packed; a few leaves reserved for garnish
  • 6 oz feta cheese cut into small cubes
  • 1 garlic clove minced
  • 1 tbsp lemon juice
  • 1 tbsp whole milk greek yogurt
  • freshly ground pepper
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp unsalted pistachios chopped, for garnish; optional
  • 1 scallion sliced, for garnish; optional

Instructions
 

  • Blanch the peas. Bring a medium pot of water to a boil. Add peas and return to a boil. Once the water & peas return to a hard boil, set a timer for 90 seconds. Drain peas immediately and transfer to a big bowl of ice and ice-cold water. Once the peas are cooled, drain well.
  • Add ingredients 1-6 to the bowl of a food processor. Blend for a 2 minutes, then slowly incorporate extra-virgin olive oil. Continue to blend until smooth. Taste, adjust seasoning if needed.
  • Garnish with mint leaves, chopped pistachios, and sliced green onions.

Notes
