This Pear and Blue Cheese Tart is an easy party food, appetizer, or brunch dish. I’m making this again for New Years morning because it was such a hit last week!

I love that it only takes 25 minutes to make. It’s sweet, savory, and delish!

Equipment

  • 1 Rolling Pin
  • 1 Pizza Cutter
  • 1 baking sheet
  • parchment paper
  • paring knife
  • chef knife or mandolin
  • measuring cups ½ cup measurement
  • 1 small bowl for the egg wash
  • 1 fork to beat the egg
  • basting/pastry brush

Ingredients
  

  • 1 sheet of all-butter puff pastry thawed
  • all-purpose flour for rolling
  • 1 egg to brush edges of the PP; beaten
  • 1 pear Comice or Bartlett are ideal
  • ½ cup blue cheese
  • ¼ cup pistachios toasted and roughly chopped
  • honey
  • extra-virgin olive oil
  • fresh thyme

Instructions
 

  • Preheat oven to 425 degrees ℉ and set a rack to the middle position.
  • Thinly slice pears lengthwise using a knife or a mandolin. Cut pear slices in half and remove seeds using a paring knife.
  • Sprinkle a flat surface with all-purpose flour. Roll a sheet of puff pastry flat. Cut into 4-6 equal sized pieces.
  • Arrange 3-4 halved pear slices to each piece of puff pastry. Top with crumbled blue cheese and chopped toasted pistachios. Drizzle with a little bit of extra-virgin olive oil.
  • Brush pastry edges with the egg wash. Bake for 15 minutes or until puff pastry is golden brown.
  • Drizzle with honey and sprinkle with fresh thyme leaves.
