- In a medium bowl, whisk together the mayo, garlic, anchovy paste, lemon juice, Dijon mustard, Tabasco, Worcestershire sauce, salt & pepper .
- Add the Parmigiano-Reggiano; whisk until well-incorporated. Taste and adjust as needed.
- Store in an airtight container or jar in the fridge for up to 5 days.
Notes
IS ANCHOVY PASTE NECESSARY?
Unless you're vegetarian, I wouldn't skip out on the anchovy paste! It adds a depth of flavor that cannot be replicated. The amount recommended in the recipe won't be fishy whatsoever. Let's just say it's one of those ingredients you wouldn't know was there, but you would know if it was missing. Sometimes I add a smidge more than what I've noted in the recipe.
