Method
- Preheat the oven to 425°F and set a rack to the middle position.
- In a medium frying pan/skillet, heat olive oil over medium heat. Add fresh spinach and sauté until liquid is evaporated and spinach has reduced; set aside.
- Roll out pastry dough on a lightly floured surface. I rolled mine into roughly a 8x10 shape. Trim excess pastry to create a uniform piece.
- Brush a 1 inch perimeter of the pastry with extra-virgin olive oil.
- Spread Trader Joe's Chunky Artichoke and Jalapeño Dip on the inside of the extra-virgin olive oil perimiter. Top evenly with the cooked spinach and then with the quartered artichokes.
- Place in the oven and bake for 20-25 minutes, checking at the 20 minute mark. You want the edge to be golden brown but be careful not to burn.
- Serve solo or alongside any dish of your choice.
Notes
What to do if you don't have access to a Trader Joes:
This recipe is entirely based around the Trader Joe's Chunky Artichoke and Jalapeño Dip, which happens to be one of my favorite TJ's products EVER! It's artichoke forward, with a cream cheese and Monterey Jack base, and a hint of heat of jalapeño; SHE THICK!
If you don't have access to a beloved TJ's, swap with your favorite artichoke dip but be mindful of the above ingredients. Meaning, you want something THICK and RICH. A runny dip won't fly or shine in this recipe. You can certainly scale back the dip and add your own grated cheese, extra artichokes etc.
